Grilled Shrimp Skewers with Watermelon Feta Salad

    Preheat grill to 450°F.

    Add diced watermelon, lemon zest & juice, mint, and a pinch of salt and pepper into a mixing bowl. Mix well, and reserve.

    • 3 cups Seedless Watermelon (diced)
    • 1 Lemon (zest and juice)
    • 2 tablespoons Fresh Mint (chopped)
    • Kosher Salt (to taste)
    • Black Pepper (to taste)
    • Vegetable Oil (as needed)

    Place honey and sriracha into a bowl. Mix well. Reserve.

    • 1/2 cup Honey
    • 2 tablespoons Sriracha

    Place shrimp into a small bowl. Season with garlic, pinch of salt & pepper, and oil. Toss to coat evenly.

    • 1 tablespoons Granulated Garlic
    • Kosher Salt (to taste)
    • Black Pepper (to taste)
    • Vegetable Oil (as needed)

    Place shrimp onto skewers. Place shrimp skewers onto grill, and cook for 2-3 minutes on each side. Once done, remove shrimp skewers from grill, and place onto cutting board to rest.

    To plate, place watermelon salad onto a plate and place shrimp skewers on top. Drizzle sriracha hot honey over the shrimp & salad. Serve and enjoy!
